Year 1 papers:
DHTM 101- Tourism and Hospitality Studies I (Level 5) 15 credits
This paper introduces students to a range of issues and concepts that are relevant to the hotel and tourism industries. The paper will provide an awareness of the patterns and trends in tourism, both on a global scale and with reference to the three kinds of tourism systems affecting New Zealand.
Application criteria: Admittance to the programme.
Assessment: Three internal assessments (report/essay format). No examination is required for this paper.
DHTM 102- Personal Communications for Tourism and Hospitality (Level 5) 15 credits
This paper explores the theories and practices of communications as they pertain to hotel and tourism management. Topics covered include the communications model, verbal and non-verbal communication, interpersonal and cultural communications, effective writing, persuasion and motivation and organisational communications. This paper provides both theoretical and practical information.
Application criteria: Admittance to the programme.
Assessment: Three internal assessments (email/report/essay format) and one external examination.
DHTM 103-Introduction to Tourism and Hospitality Marketing (Level 5) 15 credits
This paper is designed to introduce students to the concept and functions of marketing within the hotel and tourism industries. In particular the paper focuses on developing an understanding of how tourism and hospitality managers can stay close to their customers, be aware of their competitors' actions and keep abreast of market trends within their operating environment.

Assessment: Two internal assessments (report format) and one external examination.
DHTM 104-Introduction to Tourism and Hospitality Management (Level 5) 15 credits
This paper introduces students to concepts, theories and practical examples of organisations and the fundamentals of managing these organisations within the hotel and tourism industries. The paper will provide an awareness of tourism businesses and form a knowledge base which students may draw on as they progress through their academic career.

Assessment: Two internal assessments (report /essay format) and one external examination.
DHTM 105-Food and Beverage Management (Level 5) 15 credits
This paper examines the management of food and beverage facilities focusing on strategic, managerial and operational impacts on product and service quality and organisational profitability.
Application criteria: Admittance to the programme. It is recommended that DHTM 101, 102, 103 and 104 papers are completed prior to enrolling in this paper.
Assessment: One internal portfolio and one external examination.
DHTM 106-Financial Analysis for Tourism and Hospitality (Level 5) 15 credits
This paper presents a financial statement user perspective in understanding financial information and issues. Links are developed between activities mainly in hotel and tourism organisations with accounting information. The topics include understanding financial statements, management of cash and credit, revenues and expenses, behaviour costs, issues concerning assets, liabilities and shares.
Application criteria: Admittance to the programme. It is recommended that DHTM 101, 102, 103 and 104 papers are completed prior to enrolling in this paper.
Assessment: Two internal assessments and one external examination.
DHTM 107-Hotel Operations (Level 5) 15 credits
This paper looks at the hotel industry, specifically front office, housekeeping skills and the successful ways to manage these areas. The accommodation sector forms a large part of the hospitality industry and there is an increasing need for employees within this sector to understand the management principles and issues concerning room division from both the front office and housekeeping perspective.
Application criteria: Admittance to the programme.
Assessment: Two internal open book assessments and one external examination.
DHTM 108-Tourism and Hospitality Sales and Promotion (Level 5) 15 credits
This paper will introduce candidates into the world of promotion in the hotel and tourism industries. It includes areas such as public relations, advertising, personal selling, designing and managing products which involves pricing strategies and distribution options.

Assessment: Two internal assessments (report format) and one external examination.
Year 2 papers:
DHTM 201- Tourism and Hospitality Studies II (Level 6) 15 credits
This paper builds on DHTM 101 including consideration of issues such as eco-tourism, sustainability and authenticity in tourism. In this paper the focus widens from elements of whole tourism systems to the interactions of these systems with their environments.
Application criteria: Prerequisite paper DHTM 101.
Assessment: Two assignments and one external examination.
DHTM 202- Human Resource Management in the Tourism and Hospitality Industry (Level 6) 15 credits
This paper introduces the understanding of principles and practices of human resource management to help maximise the potential of employees. This includes topics like legislation requirements in business, human resource planning, training and development.
Application criteria: Prerequisite paper DHTM 104.
Assessment: Two assignments and one external examination.
DHTM 203- Tourism and Hospitality Research and Analysis (Level 6) 15 credits
This paper will give candidates an understanding of the research process and basic statistics important in making business decisions. The paper will help candidates understand the importance of collection, analysis, interpretation and presentation of research results in tourism management decisions. It aims to provide a basic introduction to research planning and design, including data collection and data analysis techniques applicable to tourism and business research.
Application criteria: Prerequisite paper DHTM 102.
Assessment: Two assignments and one external examination.
DHTM 204- Tourism and Hospitality Services Management (Level 6) 15 credits
This paper will link marketing, human resource management with food and beverage.
Candidates will learn why the customer is considered the centre of the organisation. At the end of this paper candidates will have developed skills in organisational strategies and service management techniques.
Application criteria: Prerequisite paper DHTM 103.
Assessment: Two assignments and one external examination.
DHTM 205-Strategic Management for Tourism and Hospitality Enterprises (Level 6) 15 credits
This paper will give candidates an advanced knowledge and understanding of various theories and practices in strategic management applicable to organisations in the hotel and tourism industry. The paper will also build on strategic issues previously learnt in the programme.
Application criteria: Prerequisite paper DHTM 104 and DHTM 204.
Assessment: Two assignments and one external examination.
DHTM 206- Hospitality and Tourism Financial Management (Level 6) 15 credits
The aim of this paper is to develop a candidate’s skill in understanding, interpreting and using management accounting and other financial information mainly in the hotel environment. It will enable each candidate to use financial and operating information for management in planning, control, evaluation and decision making.
Application criteria: Prerequisite paper DHTM 106.
Assessment: Two assignments and one external examination.
DHTM 207-Employment Relations and Law for Tourism and Hospitality (Level 6) 15 credits
This paper builds on knowledge of the New Zealand legal system. As tourism organisations operate in a complex legal environment, managers must be aware of the business implications of the legal requirements of operations in their industry and understand their legal obligations to guests and staff. Employee relations affect the environment within which business decisions are made. As such the employment relations system in New Zealand has many implications for the operation of the various sectors of the tourism industry.

DHTM 208- Entrepreneurship in Tourism and Hospitality (Level 6) 15 credits
This paper examines entrepreneurship, new venture creation and innovation in tourism and hospitality industries.
Application criteria: Prerequisite papers DHTM 103 and DHTM 106.
Assessment: Two assignments and one external examination.
